Hey guys,
Pancakes are always a good idea. But sometimes it is too boring to have just some pancakes. Well, why don’t you make some applering-pancakes? You do only need a pancake dough and an apple. It looks actually pretty cool and I love the freshness of the apple inside the pancake. I used applerings but you can also use slices of the apple to put into your pancakes.
You’ll need:
- 1/2 cup {70g} flour (whole wheat or any other healthy flour)
- 1/3 cup {80g} coconut milk
- 1 tsp coconut-sugar
- 1 tsp vanilla
- 1 egg yolk
Mix all the ingredients together and fold under
- one egg white.
Now core and slice the apple. Dip the apple rings into the dough. Sear ‚em in a pan with some coconut oil or bake in the oven (320°F/160°C) for about 5-10 minutes until the dough gets golden brown (on a baking paper).
I love to eat it with some curd, syrup and fresh fruit.

Pancakes sind einfach das perfekte Frühstück, doch manchmal ist es einfach zu langweilig oder man hat so langsam die Schnauze voll davon. Dann probiere mal Apfelring-Pancakes! Das ist super simpel, geht genau so schnell wie normale Pancakes und du brauchst nur eine weitere Zutat: einen APFEL. Es sieht einfach richtig cool aus und ich liebe diesen frischen Geschmack des Apfels. Du musst natürlich keine Ringe machen, du kannst den Apfel auch einfach vertikal schneiden, sodass du kein Loch in der Mitte hast.
Du brauchst:
- 70 g Mehl (ein gesundes Mehl, wie Dinkelmehl)
- 80 g Kokosnussmilch
- 1 TL Kokosnusszucker
- 1 TL Vanille
- 1 Eigelb
Vermische alles miteinander und hebe
- ein geschlagenes Eiweiß darunter.
Nun musst du nur noch deinen Apfel entkernen und in Scheiben schneiden. Wende die Apfelringe im Teig und brate sie in einer Pfanne mit etwas Kokosöl an. Du kannst sie auch im Backofen (160°C) für etwa 5-10 Minuten backen (auf einem Backpapier) bis sie goldbraun sind.
Sie schmecken super mit etwas Quark, Sirup und frischen Früchten.
