Raspberry Coconut Cake

Hey guys,

I think everybody loves cake? Especially if it’s a healthy one! I got a recipe for a raspberry-coconut-cake. It’s actually my moms‘ favorite cake, as well one of my favorite cakes. Earlier I did make them „unhealthy“ with sugar, butter and all these things, because this was the recipe like. Well, that’s why I didn’t make this cake for a long time. But because we love this cake so much, I wanted to try to make it clean and I had success. It turned out very delicious.

You’ll need:

  • 2 cups {220 g} spelled flour
  • 3/4 cup {80 g} oats
  • 4 tsp baking powder
  • pinch of salt
  • 5 eggs
  • 3 tbsp oil
  • 8 tbsp curd
  • 2 tbsp coconut-flower-syrup (sweetener)
  • 2 tbsp maple syrup (sweetener)
  • 10 tbsp coconut milk
  • 3/4 cup {150 g} shredded coconut
  • 2 cups {300 g} raspberries

Combine everything (except raspberries) and mix well. Then add the raspberries, you can add more or less, however you prefer it. Oil your baking pan and fill in the dough. Preheat the oven: 360°F / 180°C. Bake the cake for about 30 minutes until it gets golden brown. Enjoy.

I love to eat it with frozen berries on the side. I hope you try it and love it as we do.

Hallo meine Lieben, heute habe ich das Rezept für den Lieblingskuchen meiner mom, es ist natürlich auch einer meiner Lieblingskuchen. Ich habe ihn früher sehr oft gemacht, doch es war ein „ungesundes“ Rezept, also mit Zucker, Butter… Das ist der Grund warum ich ihn schon so lange nicht mehr gemacht habe. Doch es wurde mal wieder Zeit und deshalb habe ich versucht ein cleanes Rezept daraus zu machen. Et voilá. Er ist sehr gut gelungen, er ist super saftig und natürlich schön fruchtig. Ein toller Genuss, garantiere ich euch!*-*

Ihr braucht:

  • 220 g Dinkelmehl
  • 80 g Haferflocken
  • 4 TL Backpulver
  • eine Prise Salz
  • 5 Eier
  • 3 EL Öl
  • 8 EL Quark
  • 2 TL Kokosblütensirup (Süßungsmittel)
  • 2 TL Ahornsirup (Süßungsmittel)
  • 10 EL Kokosnussmilch
  • 150 g Kokosnussraspeln
  • 300 g Himbeeren

Vermische und verrühre alles (außer die Himbeeren), wenn alles gut verrührt ist, gebe die Himbeeren dazu und hebe sie unter den Teig. Öle deine Kastenform und fülle den Teig in die Form. Heize den Backofen auf 180°C vor. Backe den Kuchen für etwa 30 Minuten bis er goldbraun ist, mache am besten noch eine Stäbchenprobe. Genieße es.

Ich liebe es, den Kuchen mit ein paar gefrorenen Himbeeren zu essen. Ich hoffe ihr probiert den Kuchen und er schmeckt euch genauso gut, wie uns;)
